Do you love mushrooms? Then prepare to swoon at this rendition of mushrooms on toast, which sees a swath of creamy ricotta spread on crusty toasted bread, a crown of earthy sautéed mushrooms and the lily gilding: a hearty broth swirling around the mushroom mixture scooped around it is toast made with dried mushrooms, soy sauce and lightening sherry vinegar.

For the best experience, reach for a loaf of crusty country bread (or if you’re really ambitious, bake your own sourdough bread). Use any mix of wild mushrooms you can get your hands on: chanterelles, portobellos, crimini – even supermarket white button mushrooms would be delicious when paired with the hardy dried shiitakes (or porcini!). We also like to use a blend of tender, fresh herbs as well as fresh garlic and chili flakes in the garnish for this mushroom toast recipe, but you can stick to just one if you prefer. Want an extra portion of protein? We wouldn’t mind balancing a poached egg on it. Serve with a glass of white wine for an elegant, simple meal.
